Recipes From Colombia
Colombian cuisine combines both European and native traditions. Colombia’s geography includes
the Caribbean coast and the Andes Mountains with its isolated valley communities, resulting in
many distinct cuisines. Potatoes thrive in the high valleys, and many traditional dishes are potato
based. Foods from Colombia’s tropical coast, such as plantains, avocados, and coconut, as well as fish, also
contribute to the many tastes of Colombian cuisine.
Bandeja Paisa

Bandeja paisa is one of the best-known dishes from the Colombian region of
Antioquia. This dish of red beans and carne molida (ground beef) is a meal
in itself with the addition of chicharrón (crackling pork), chorizo (spicy pork
sausage), tajadas maduras (fried plantain), rice, and arepa (a type of corn), all
topped with a fried egg.

Ajiaco Santafereño

Ajiaco Santafereño is a creamy potato soup from the Santa Fe district of Bogotá.
This delicious hearty soup typically includes chicken, three varieties of potato,
corn, and a native herb called guascas (Galinsoga parviflora) that gives this
soup its distinctive taste. The soup is garnished with heavy cream, capers,
and avocado.
