Bolivian cuisine is a combination of indigenous and Spanish cuisines. Corn, rice, and potatoes are staples in Bolivia. In the high sierra, where corn does not grow well, the native Americans of Bolivia still cultivate close to 30 varieties of potato. Fish, caught in Lake Titicaca, and meat are consumed in spicy-hot dishes, and vegetables and savory and spicy sauces add great variety to Bolivian cuisine.
