chile peppers, tomatoes, and squash. As a tropical country, coconut milk, plantains, bananas, and cassava

Corn cakes are a traditional favorite in Honduras and several other Central
American countries. This recipe uses fresh corn, which makes the corn cakes
particularly nutritious. You can vary this recipe with the addition of shredded
cheese and chopped chile peppers. For a sweet version, add raisins and
cinnamon, and substitute milk for the warm water. To make them even
sweeter, add 1 to 2 tablespoons of sugar.
